Southwest Turkey Soup

I have a giant zip lock bag stuffed with leftover turkey. (Cooked a turkey on Sunday) I am not even making a dent in it and it's going to go bad before we can eat it all. I will be making this recipe, in a day or so:

But that will only use a tiny bit of it. If anyone has a turkey recipe they want to make, please come get some turkey from me! I hate just throwing it out!

  1. The Pioneer Woman has a Turkey Pot Pie recipe, I know you have a pot pie you make...you could throw your turkey in it, too!!

  2. You should definitely make some pot pies Tiff - you could even double the recipe (I know...tons of work!) and have a few pies in the freezer.

  3. I would think that most anything that calls for chicken you could substitute turkey...am I wrong? Would that turn out gross?

  4. I was gonna say the same thing Lindsay- I use turkey all the time in place of chicken- works really well with casseroles and chili.
